Cooking Column: Easy Broccoli Quiche makes its own crust

This quiche recipe is so easy – it even forms its own crust. If you’re short on time but need to impress, this recipe could be just what you’re looking for. 

Ingredients:

 

Easy Broccoli Quiche

Mix together: 

3 eggs

3 teaspoons flour

¼ cup melted butter

1 pound cottage cheese

¼ pound shredded cheese (Cabot is a great choice)

¼ cup finely chopped onion

Preheat the oven to 350 degrees.

Lightly saute 1¼ cups fresh bite-size broccoli for 5 minutes, or.cook 10 ounces frozen chopped broccoli for 5 minutes. Drain well. Add to the above mixture, stir gently. Another option is to saute some fresh mushroom slices and place on top before baking.

Bake in a greased 10-inch pie plate for 45-50 minutes. Let it sit for 5 minutes before cutting.
