❖ What is Galley Steward/Utility…?


• Responsible for washing, Rinsing & Sanitazing all kitchen &
restaurant Equipment Such as Plate, Chinaware, Silverware &
Glassware and another.

❖ Positions in Galley…?
• DISHWASHER : Washing plate, Glass, silver and another
Using dish washing machine.
• POTWASHER : Washing pan, sauce pan, stock pot and
Serving disk & equipment that has big size.
• DAY CLEANER : Washing kitchen tools like grills, griddle,
Deep fryer & cleaning the garbage too.
• NIGHT CLEANER : Their responsibility is like day cleaner but
Just different in working time.
• LINE CLEANER : Responsible for handling and preparing
Clean plate & bowl to use for serving
dishes in Lunch & Dinner time and clean
Line where waiters will take the food.

❖ What is 3 Comprement Zink…?


▪ 3 Comproment Zink is manual cleaning procedure for washing,
rinsing & sanitazing. we use for cleaning big size equipments that
we can not wash in DISHWASHING Machine
❖ What is CHEMICAL in Galley…?
▪ Lime away

▪ Multi purpose cleaner
▪ Enforce

▪ Bleach

❖ What is SDS …?
▪ SDS is SAFETY DATA SHEET.
▪ SDS contain instructions and the safety way to handle Chemical.
▪ It can be found in the chemical storage.

▪ PPE is PERSONAL PROTECTIVE EQUIPMENT.

▪ Safety shoes

▪ Glasses

❖ Why PPE is Very Important…?
▪ PPE is Very Important because it will protect Us when we work
from any accidents.
❖ 3 BUCKET SYSTEM…?
▪ 3 Bucket system is a cleaning procedure for washing, rinsing &
sanitazing using 3 bucket with different function and colour.

❖ 3 Bucket System Colour & Function…?


▪ Red Bucket : For washing – Using warm water &
detergent.
▪ Grey Bucket : For Rinsing – Using plain Hot Water.
▪ White Bucket : For sanitazing – Using with clorine
50-100 PPM,
mixed in white bucket – 75oF for 30 secs.

❖ Cleaning Method to apply 3 Bucket System…?


▪ Clean the surface using soap solution and sponge.
▪ Then rinse with water
▪ After that, sanitize using sanitize solution.

❖ What is USPH…?
▪ USPH is United State Public Health.
▪ USPH is Organization from USA that responsible to check clean &
health on the ship.

❖ What is the different between CLEANING &


SANITIZING…?
▪ Cleaning is only removing the visible dirt.
▪ Sanitizing is removing & reducing the number of bacteria.
❖ What is Cross Contamination & Direct
Contamination…?
▪ Cross Contamination is Transfer bacteriafrom one surface to
another surface.
▪ Direct contamination is Contamination from bacterial place to
another.

❖ What is Personal Hygiene…?


▪ Personal hygiene is to always keep our body clean & hygiene
from any dirt & bacteria.
❖ Why personal hygiene is very important…?
▪ To keep our Grooming and to avoid cross-Contamination

❖ Where do you do throw the garbage …?


▪ First I separate the garbage based on the types then I throw to
the garbage bin

• In my hotel before there are 3 garbage bin :


o Blue is For alumunium & glasses.
o Yellow is for food waste.
o Grey is for wood & plastic.
