5.1 The culinary culture of Hà Nội


With over a thousands year of history, Hà Nộ i culinary reflect the way
others see as humble, polite, but exquisite style of eating. As the same time,
show the living conditions of the Hà Nộ i people, which is unlike many have in
mind, as understood that Việt Nam history is filled with war. The way they
prepare for every dish usually base on time and special occasion, through this
we can understand that Hà Nộ i cuisine is not so simple but have a certain
complexity, making it more than just eating to survive, which debunk the

5.2 Methods and ingredients
Hà Nộ i is on the center of the delta, so it has gained abundant materials
from fishing and agriculture as, farm animals, freshwater animals, vegetables,

as: deer, sambar deer, snake, tortoise, mushroom, bamboo shot, porcupine,...

private and different from their native. Hà Nộ i people have developed most of
modern day cooking technique, steamed, boiled, fried, BBQ, smoked, stir-
fried, and ferementing (pickled). The dish can also be determined by the way
it is layout. On the tray of food of Hà Nộ ians, there are often two main courses,
cooked courses with water and dry courses as caramelized, fried. On the
banquet there are two way, either served on plates or bowls. Plates for most
sir-fried, food that have little or no liquid, and bowls are for soups or stews,
and a smaller bowl for rice.
A part from the main meals, Hà Nộ i cuisine also have it own iconic
desserts, and snacks. In Vietnamese we called bá nh mứ t, basically coconut
meat braise in sugar, and dried sugary fruits, and dried pumpkin,
watermelon, sunflower seeds. Most snacks are a part of Tết, when most
family use snacks as tributes, a side from that, fruits are also a great desserts.
5.3 Some iconic Hà Nội dishes
The culinary scene of Hà Nộ i used to be Việt Nam dishes, from flavors to
materials carefully selected and then processed dishes. Although after many
years, the culinary culture of Hà Nộ i still retains its true flavor. Although
nowadays the dishes are processed extremely diverse, they still bring a truly
unique feature for Hà Nộ i. Hà Nộ i cuisine is said to be of sensory harmony,
from the ingenious harmony of ingredients. Hà Nộ i choose food that has a
frugal, light, sour taste, and the dish has a moderate taste but with a colorful
